We've talked about it, lots. Dabbled in it, often. Now, we've taken the plunge. The last of the butter was used in my last batch of chocolate chip cookies last week. There are still a few eggs left, but I think that's it.
Mark is definitely more into this transition than I am. Let's face it, I am fine with a handful of nuts and a salad. It takes much more to engage his palette but he has taken on the challenge. I even have him wearing an apron now to protect his clothes! It's 10:30 here and he is down in the kitchen concocting some sort of Asian dish with toasted almonds and fresh pea pods. As for me, I'm heading to bed. I did take care of putting together some healthy eating for during the day tomorrow. Pasta with roasted tomatoes and sweet onions, apples, strawberries and my special almond/raisin snack. I have been reading a few vegan cookbooks, but I am just not all that excited about the transition. There is hope, on Saturday I received this in a postal love package from my favorite postman -
If I can work on boosting my performance while being vegan, perhaps I would consider that a win-win. Ah, there's hope for me yet!
